Digna Zuniga has been working as a small holder farmer for about 20 years working with many different small crops. It is only for the past 6 years she has been growing coffee and working with the ASPROSANLOR group who are part of the Cooperative Cosurca who have been working hard in the communities they work with around the Popayan region. The Cooperative have a number of programs with a real focus especially on empowering their members with education and training to help them prosper post conflict. Digna lives on the farm with her husband and children where they work together on the cultivation of the coffee organically as they believe in working this way to help conserve their land and protect the environment.
On the farm the coffee is planted among banana & Guaba trees which are known for producing the sweet ‘ice – cream’ bean which attracts builds and animals to help with bio diversity. These trees are excellent for providing shade. During the harvest from May to September the coffee is hand-picked and then pulped on the same day of collection. The coffee is then left to ferment for 14 hours before then being washed and then dried in a parabolic drier for 8 – 10 days.
